Lemon Cake - Bizcocho De Limon

This is a recipe from Spain that we refer to as “Laura’s Cake”.  My sister in law is from Spain and a friend of hers has passed on the recipe.  The cake is great –it is a variation of a pound cake – but with no butter, and the measurements are made with a yogurt cup – so easy.  It is the most requested afternoon school snack at my house.  


RECIPE:


BIZCOCHO DE LIMON  (Lemon Cake)

Ingredient's:

1 container of yogurt (6oz) plain or lemon flavored
4 eggs
Sugar  -- 3 filled yogurt cups
Vegetable oil – 1 yogurt cup
Flour – 4 filled yogurt cups
Baking powder – 2 ½ teaspoons
Zest of 1 lemon


Directions:

Use the empty yogurt cup for measuring.

With a whisk mix the eggs and sugar well. Add the yogurt and vegetable oil.  Stir in the flour and baking powder and until just combined.

Add the zest of 1 lemon.

Pour into a Bundt pan coated with butter and flour.

Bake in the oven at 360F for around 45 min.

Check with a toothpick to make sure it comes out clean.

Let the cake cool off completely before taking it out of the mold.

Dust with confectioners sugar and serve.
