Cheese cake -- "Easter Pie"

RECIPE:  Classic Cheese cake
Cheese cake Classic Recipe

Preheat oven to 325 degrees.

Ingredients:

Crust:

1 Cup graham crackers crumbs
3 Tablespoons sugar
3 Tablespoons butter, melted

Mix graham crackers crumbs, sugar and butter.  Press onto bottom of pie pan.  Bake 10 minutes and cool.


Turn oven up to 350 degrees.

Filling:

2 packages (8oz) cream cheese, room temperature
2/3 cup sugar
1 Tablespoon lemon juice
1 Teaspoon vanilla
2 eggs

In a large mixing bowl, beat cream cheese on medium speed of electric mixer until fluffy.  Add sugar, lemon juice and vanilla.  Beat until combined.  Add eggs, one at a time, beating until just combined after each addition.
Pour into cooled crust.  Bake at 350 for 30 minutes, until center is almost set.

Topping:
1 cup sour cream
3 Tablespoons sugar
1/4 Teaspoon vanilla

In a small bowl combine sour cream, sugar and vanilla.  Carefully spread over cheesecake.  Bake at 350 degrees for 5 minutes.  Cool on wire rack for 1 hour.  Refrigerate at least 3 hours or overnight.

Store in refrigerator.
