Frittata with Sausage

RECIPE:

FRITTATA With SAUSAGE

Ingredients
  • 12 large eggs
  • 2 pounds hot or sweet sausage -  (which ever is preferred) - cut into small pieces
  • 1 large container of ricotta cheese
  • Salt and pepper to taste
Preparation:
  1. Beat eggs and ricotta and set aside.
  2. In a large frying pan fry sausage till cooked.  Remove sausage and drain well. Empty grease from pan and add a little oil to the pan. 
  3. Add sausage and the ricotta and egg mixture. Cook slowly on one side.  (Yell for G )..  Place a plate over the pan and flip it so the frittata will be on the plate.
  4. Slide it back into the pan to finish cooking.

--  or don't flip  - and place pan under the broiler for a few minutes.  Keep a close eye on the mixture so it doesn't burn.  The eggs should be just set, they will continue to cook when taken out of the stove.

Serve as slices either warm or cold.
